I'm on a quest to eat healthier and to learn how to actually cook...good luck to me. :P This past weekend I decided to flip through this book I had called Deceptively Delicious by Jessica Seinfield (yep, Jerry Seinfield's wife). It's mostly aimed towards parents who have children that are picky eaters; how to get more vegetables and healthy things into their favorite foods deceptively. ;)The "secret" is to puree different kinds of vegetables/fruits to use in the recipes...which sounds sort of weird, right? Like, you use spinach and carrot purees for brownies, butternut squash puree for macaroni and cheese. O_o Wut? Eh? But hey, it wouldn't hurt to try right?
So after I did some shopping I invited Jess over to experiment with me. We pureed a bunch of carrots and spinach and then proceeded to make brownies! Lo and behold...the brownies tasted awesome!! O_o I even wanted to toss in more chocolate chips to make them even chocolate-ier! Success!!
Later that night I pureed some butternut squash and used it to make some freakin' amazing mac n' cheese that had a super creamy sauce! Lastly, I attempted to make scrumptious Peanut Butter & Jelly Muffins...but I guess there was too much batter...because they turned into...
ZOMBIE MUFFINS!!!
Yeah, so the jelly sort of esploded out. XD They still taste very good, like peanut butter cookies! I had two for breakfast this morning. :D Nom nom.
I am planning on making homemade chicken nuggets tonight, so we'll see how that goes. :P I will take pictures and post them on my Flickr as I go! :D Wish me luck!
